About Bonesse's Tomato Apizza

 One night, while driving home from a Yankee's game, Camillo & Rosamaria Bonesse looked up and saw the Exit 7 sign, showing the split to get to Trenton, NJ & New Haven, CT.  That's when they thought of combining their backgrounds to make a hybrid style of pizza.

 

The New Haven style is from Camillo's side, where his father worked at Pepe's and opened his own pizzeria, Bonesse's Apizza in 1995, in the New Haven area where Camillo grew up, and worked up until he fell in love with a Jersey girl and moved to NJ when they got married. The Trenton style represents Ro's father, who grew up in the Chambersburg section of Trenton, home of the Trenton Tomato Pie, influencing his own style, even as he moved away and opened his own pizzerias in Central NJ, the original owner of Vinnie's Pizza in East Brunswick, opened in 1977, and Maria's Pizza in Milltown, opened in 1987. 

Together, when Ro's mom retired from Maria's 8 years ago, Camillo & Ro took over Maria's Pizza in Milltown and updated the menu and pizzeria to include their own styles & recipes. With the support of the town during Covid, and Dave Portnoy's visit, Maria's Milltown grew and got busier.  They realized they had outgrown their Milltown store.  In 2024, they opened Maria's in Spotswood, where it's been just as successful as Maria's Milltown. 

 

While they adore both locations, they always wanted to open a pizzeria to showcase the hybrid style they created. They decided East Brunswick would be the perfect location, as it can still cater to their existing customers, but offer a different style of pizza, as well as more seating and a semi-private party room, which their other locations do not have. When the Legacy apartments opened, they thought it would be a perfect spot to begin another chapter in their pizzeria lives. Being a completely empty store, they started to build their concept from scratch, from the walls to the decor to the menu.  They can't wait until they open, hopefully by September 2025, to be able to share this style pizza with East Brunswick and the surrounding areas!

Bonesse's Tomato Apizza, is dedicated to crafting the finest pizzas & Italian specialties that satisfy every palate. Their hybrid pizza is a thin-crust pizza, topped with a chunkier, fresh sauce, high-quality shredded mozzarella, then then cooked in a brick oven until it is well-done and the edges are slightly charred. The commitment to quality and taste shows in everything they serve. Using the finest ingredients and pairing them with  housemade recipes delivers unforgettable meals.
